This is one of my family’s favorite recipes. It’s fabulous for a side dish… And dessert!
Y’all know I’m usually posting healthy stuff… This is not in the healthy category. So in my Tips to Survive the Holidays, I have to add, “Don’t eat too much Sweet Potatoes & Apples”.
SWEET POTATO & APPLE CASSEROLE
Ingredients
3 medium sweet potatoes, peeled and sliced
2 c. sliced peeled apples
3 c. miniature marshmallows
1 c. sugar
1 tsp. salt
1 tsp. cinnamon
chopped nuts, optional
2 tbsp. cornstarch
1/2 c warm water
1 tbsp. butter
Instructions
Place sweet potatoes in buttered baking dish. Add apples; layer with marshmallows. Mix sugar, salt, cinnamon and nuts. Sprinkle over marshmallows. Mix cornstarch with 1/2 c. water until smooth; pour over all. Dot with butter. Cover.
Bake at 350°F for 1 hour.
Yield: 6 servings.
